I’m not really sure when it happened but some time over the last month or so, some new person has switched bodies with my wife. This new person all of a sudden after 25 years of marriage loves to go camping. I probably should really call it glamping but hey, I will take it. It doesn’t hurt that we have a new travel trailer that has most of the comforts of home.
So, last weekend we headed out to Lake Arrowhead to meet my family. My mother and father who are both over 70 were the only ones sleeping in a tent. I felt really bad but not bad enough to give up may bed. Sorry mom and dad.
This weekend was pretty low key from a cooking perspective. The focus was on fishing, hiking and relaxing. But I did redo the pulled pork and potatoes from the Chickasaw trip since my family didn’t go on that trip. It was also a great way to make sure we had plenty of leftovers for breakfast tacos on Sunday morning before packing up.
I will admit I took the easy way out cooking up the breakfast tacos. I used the gas stove top in the camper. As I said, the focus of this trip was about relaxation.
Breakfast taco recipe
1 lb leftover pulled pork (in the recipe section)
1lb leftover dutch oven potatoes (in the recipe section)
½ red onion
3T vegetable oil
Heat vegetable oil over medium heat. Add potatoes and onions. Saute until onions are opaque and potatoes start to turn brown and crisp. Add in the pulled pork and allow it to heat through. Pour in the eggs and cook until the eggs are scrambled.
